This salad was inspired by the 7 species (Shiv’at Haminim) found in the Bible, which we used to consume during Tu BiShvat. It contains wheat, barley, grapes, figs, pomegranates, olive oil and honey (symbolizing dates).
Thus we remember that the Eternal gave to the people of Israel the land of milk and honey, Canaan.
INGRIDIENTS FOR THE SALAD:
Mixed greens
1/2 cup of pomegranate seeds
8 dried figs, quartered
1/2 cup of halved or quartered grapes
8 dried dates, sliced
a half, thinly sliced red onion
1/4 cup of toasted almonds (can be salted or sweet)
crumbled feta or goat cheese (optional)
½ cup of toasted bread cubes.
INGRIDIENTS FOR THE DRESSING:
1/2 cup of olive oil
1/4 cup of balsamic or red wine vinegar
2 tablespoons of honey or date honey
1/2 teaspoon salt
pepper to taste
PREPARATION:
Mix all the ingredients in a large bowl except the feta or goat cheese and croutons!
Mix all the ingredients in a small bowl and let stand for a while.
After waiting for about 15 minutes, mix all the ingredients together with the salad dressing.
INGRIDIENTS:
5 tbsp of brown sugar
2 large eggs
1 cup spelt flour (or any other flour)
2 tbsp of oil
10 grams of baking powder
1/4 tsp of cinnamon
150 grams (about 1 and 1/2 cups) of walnuts - hazelnuts (halved with a sharp knife), possibly a combination of walnuts and blanched almonds roughly chopped
200 grams (approx. 1 and 1/2 cups) of dried fruit, 2 dates, raisins, peaches and dried blueberries (this can be amended as desired)
PREPARATION:
Preheat the oven to 170 degrees Celsius.
In a bowl, mix together the brown sugar, eggs, flour, oil, baking powder and cinnamon. Stir until dough is formed. Then add the nuts and dried fruit.
Place the dough in the preheated oven. Bake at 170 degrees Celsius for 40 minutes or until browned.
Let it cool and refrigerate (leave in the refrigerator overnight). Cut into thick slices and store in an airtight container.
This dessert can be the perfect way to end our Tu BiShvat fruit fesat!
INGRIDIENTS:
40 dkg white chocolate chips
1/3 cup of pistachios
1/3 cup of golden raisins
1/3 cup of dried figs, finely chopped
(Fruits and seeds can amended as desired)
PREPARATION:
Place a baking sheet on a tray or low-walled baking tray.
Heat the chocolate chips in a small pan. Heat over low heat, stirring constantly over steam, until it melts and is even.
Pour the melted chocolate on the flat tray or baking sheet you have already prepared and smooth it out with a spatula to create an even layer. Then sprinkle the chocolate with the dried fruits and nuts.
Refrigerate for 30 minutes, then remove, peel off the baking paper and crush or cut the brittle into large pieces. Serve slightly chilled. (Can be refrigerated for up to 1 week.)
It is said that there was once a man who built a sukkah with his son on the eve of Sukkot. They set up the sides of the festive tent nicely, nailed them together and then the father sent his son to look for branches to go on the top of the sukkah from which they could make the S’chach. The boy went, searching the grove but could not find a tree that would be happy to get rid of its branches. As he was searching all of a sudden a date fell on his head. He looked up and saw this huge date palm. And the tree cried out, "Come, climb up, and cut from my leaves." "How can I go up?" the boy asked since the tree grew very tall. “Look, I made a staircase for you, too. Come, cut from my branches, cover the festive tent with my fresh leaves and from the middle leaf you can make the lulav. Take some of my sweet produce for yourself, eat from it during your holiday, and adorn your tents with it. ”
The Book of Psalms (9:12), written by King David, likens the righteous man to a palm tree; tzadik katamar yifrach, the righteous man shall flourish like the palm (tamar). According to our sages, a date palm is like a person who pays attention to others in addition to his or her own spiritual needs. Its shape is straight, it never bends, it does not grow too high, but it also supplies the people around it with its sweet fruit: it gives life, strength and energy to others.
INGRIDIENTS:
parve, gluten and egg free
1 kg of dates
2 cups of coarsely ground nuts (walnuts, pistachios, hazelnuts, almonds, etc.)
2 tbsp unsweetened cocoa powder
shredded coconut
PREPARATION:
We need to pit the dates (make sure there are no pests in them).
Puree in a large bowl with a hand mixer.
Mix in the nuts and the cocoa powder. Mix thoroughly.
From the date mixture we form balls with very slightly wet hands and roll them around in the shredded coconut.
Place in the refrigerator for 1-2 hours before consumption.
